It is freezing and the cold weather has really set in over the past months in the UK. The temptation in the Winter is to opt for comfort food because we become lazier and don’t always want to cook in the cold. These delicious soups will warm you up though and they are quick and easy to make. PLUS, you won’t develop too much of a winter coat as all foods are healthy! Bean and Carrot Soup
Let’s start with Bean and Carrot Soup. Honestly, it is delicious. All you have to do is find one small onion and finely chop it into minute pieces. Make sure it is simply the strong onion that is making you cry and not that you are intolerant to the onion. This is because itchy and runny eyes are a symptom of food intolerance or allergy.
Add a finely chopped celery stalk to your mixture. A fun fact/myth about celery is that it is the only food that you burn more calories eating it than you actually consume. Fortunately, there are many alternatives to milk, including soy and oats, but you should be careful!
A summary of Carrot and Bean Soup
- 1 small onion, finely chopped
- 1 celery stalk, finely sliced
- 1 carrot, peeled and finely diced
- 300ml of vegetable stock
- 1 sprig of parsley
- 1 sprig of thyme
- 1 bay leaf
- ¼ teaspoon of nutmeg
- 50g of white beans, cooked and drained
- 100ml of soy or oat milk
After the ingredients
1. Place the onion and celery in a pan and cook until soft.
2. Add the carrot, stock, parsley, thyme, bay leaf and nutmeg and mix well.
3. Bring to the boil, and reduce to a simmer for about 5-10 minutes until the carrots are cooked.
4. Remove the parsley, thyme and bay leaf.
5. Add the beans and the soymilk.
6. Remove from the heat and using a hand or jug blender, whizz till smooth. Return to the pan, gently reheat and serve.
